It rather depends on what the LVS rules do with such a component. If they are just treated as a short in LVS, then there will be nothing in the extracted representation for you to probe. If they are preserved in the extraction part of the LVS, then they might still exist in the extracted representation and you can probe the terminals that way. It's hard to know without seeing the details of how it behaves... which is hard to know without any details of the PDK you're using. I'd expect the PDK would need to support matching a component on the schematic side with that on the layout side - even if this was being used as a means of breaking a net rather than a true metal resistor - so you might need to talk to your PDK provider.
